Green pea pancakes

  • 1 x cup of cooked green peas
  • 1 x egg
  • 1/3 cup rice flour
  • 1/3 cup corn flour
  • Small hand full of fresh dill
  • Pinch of quality salt

Pancakes are traditionally a fun breakfast, especially for kids! This recipe is a triple threat, making things super exciting with the colour GREEN, they are super easy and extremely healthy!

In a blender or food processor add peas, egg, dill, salt, rice flour and corn flour.

This will create a thick batter, depending on moisture content of the peas, add water to create the perfect pancake consistency.

On a medium to high heated pan, add oil or butter and place a scoop of the mixture to a size of your liking. Once bubbles appear to form on top, flip the suckers! You will be surprised how easy they are to flip as the mixture holds together so well.

I like to serve mine with greek yoghurt and berries, but pair with whatever you like!
