Banana Bread

  • 3 ripe - very ripe bananas, mashed
  • 2 eggs, whisked
  • 1/3 cup psyllium husk
  • 1/3 cup rice flour
  • 1/3 cup corn flour
  • 1/3 cup almond meal
  • 1 tbsp of chosen oil, melted
  • 1/2 tsp of liquid stevia
  • 1/2 tsp of cinnamon
  • Pinch of himilayan sea salt
  • 1/4 cup choc chips or cacao nibs (optional)

This method is simple!

Pre heat your oven to 180 Degree C and prepare a bread dish lined with grease proof paper.

Add banana and egg to a large bowl and combine with stevia, oil and salt.

Next, add all the dry ingredients and stir through slowly. Keep in mind the psyllium husk will expand and make the mix a little ‘gooey’,

Pour into your lined baking dish and place into you ovenĀ for 20 -25 minutes. Test the middle with a skewer and if required keep baking for a further 5 or so minutes.
