Begin by whisking all ingredients together to create a well combined pancake batter, excluding the apple, oil and syrup.
Well, that was easy!
On a LOW to medium heat begin warming 1 tbs of oil.
Keep in mind these pancakes are best cooked slowly as the sugar content of the apple sauce tends to burn quickly on high heat.
After spooning in a good tbsp of mixture to the fry pan, wait for 1 – 2 minutes to see many bubbles appear on the surface. Delicately flip the pancake!! Cook for a further 2 minutes until bottom side is browned to your liking.
Don’t be upset if the first or second pancake are not your finest artwork.. it always takes me a few attempts to get used to the style of this cooking and perfect the evenly heated surface. Repeat this process until mixture is completely used.
After creating a delicious stack, I like to fry some apples in 2 tbsp of water and let them break down a little.
Top the pancakes with your fried apples and drizzle with your choice of maple syrup or coconut nectar.
